- Soak wooden skewers in water for at least 10 minutes. Pat chicken cubes completely dry with a paper towel.
- In a bowl, mix salt, pepper, garlic powder, paprika, and cornstarch. Add chicken, drizzle with avocado oil, and toss to coat completely. Thread 4-5 chicken pieces onto each skewer.
- Preheat air fryer to 400°F (200°C). Place skewers in a single layer in the basket. Air fry for 10-14 minutes, flipping halfway, until golden-brown, crispy, and cooked through.
- While chicken cooks, melt butter and stir in minced garlic. Transfer hot, cooked skewers to a large bowl. Pour garlic butter over them, toss to coat. Add the parmesan cheese and fresh parsley, and toss again until everything is well combined. Serve immediately.
