Ingredients
  

  • 2 medium flour tortillas
  • 1 large apple peeled, cored, and finely diced (Granny Smith or Honeycrisp recommended)
  • 4 ounces cream cheese softened
  • 2 tablespoons brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter divided

Instructions
 

  1. Melt 1 tablespoon of butter in a skillet over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook, stirring occasionally, for 5-7 minutes, until the apples are tender.
  2. Spread 2 ounces of softened cream cheese over one half of each tortilla. Top with half of the cooked apple mixture.
  3. Fold the empty half of the tortilla over the filling. Melt the remaining tablespoon of butter in the skillet. Cook the quesadillas for 2-3 minutes on each side, until golden brown and crispy.
  4. Remove from the skillet, slice into wedges, and serve immediately.
