Ingredients

  • 10 inch large flour tortillas Ensure they are soft and fresh for easy rolling.
  • 8 slices bacon Cooked until crispy and crumbled.
  • 8 large eggs
  • 2 tbsp milk or heavy cream For fluffier eggs.
  • 1.5 cups shredded sharp cheddar cheese Or a blend of your favorite cheeses.
  • 1 tbsp butter
  • 1/2 tsp salt Or to taste.
  • 1/4 tsp black pepper Or to taste.

Equipment

  • 1 Large Skillet
  • 1 Mixing Bowl
  • 1 Spatula

Instructions

  1. Place bacon in a large skillet and cook over medium heat until evenly browned and crispy. Remove to a paper towel-lined plate to drain, then crumble.
  2. In a medium bowl, whisk together eggs, milk, salt, and pepper. Melt butter in the skillet. Pour in the egg mixture and cook over medium-low heat, stirring occasionally, until the eggs are soft and fluffy. Remove from heat.
  3. Stir the crumbled bacon and shredded cheese into the scrambled eggs until the cheese is just melted.
  4. Warm the tortillas in the microwave or a dry skillet for 30 seconds to make them soft and pliable.
  5. Spoon the egg mixture evenly down the center of each warm tortilla. Fold in the sides, then tightly roll up the burrito from the bottom.
  6. For a crispy exterior, place the burritos seam-side down in a hot skillet and cook for 1-2 minutes per side until golden brown. Serve immediately or proceed with freezing instructions.

Notes

For freezer burritos, allow the filling to cool completely before assembling to prevent sogginess.
Feel free to add other ingredients like diced potatoes, bell peppers, or onions to the filling.
Serve with your favorite salsa, sour cream, or avocado.
