Ingredients
  

For the Crispy Baked Chicken
  • 2.5 lbs bone-in, skin-on chicken thighs about 4-6 thighs
  • 1 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Hot Honey Glaze
  • 1/2 cup honey
  • 2 tbsp hot sauce like Frank's RedHot
  • 1 tbsp apple cider vinegar
  • 1 tbsp butter

  • 1 Baking sheet
  • 1 Wire rack
  • 1 Small saucepan

Instructions
 

  1. Preheat oven to 400°F (200°C). Place a wire rack inside a large, rimmed baking sheet.
  2. Pat the chicken thighs completely dry with paper towels. Drizzle with avocado oil and rub to coat all sides.
  3. In a small bowl, combine the garlic powder, onion powder, smoked paprika, salt, and black pepper. Sprinkle the seasoning mix evenly over the chicken thighs.
  4. Arrange the chicken thighs skin-side up on the wire rack. Bake for 35-45 minutes, or until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C).
  5. While the chicken bakes, prepare the glaze. In a small saucepan, combine the honey, hot sauce, apple cider vinegar, and butter. Cook over medium heat, stirring occasionally, until the butter melts and the sauce is smooth and gently simmering. Let it simmer for 2-3 minutes.
  6. Once the chicken is cooked, remove it from the oven. Brush the hot honey glaze generously over the crispy skin of each thigh.
  7. Return the chicken to the oven and bake for an additional 3-5 minutes to allow the glaze to caramelize. Serve immediately.

Notes

The key to crispy skin is making sure the chicken is patted very dry before seasoning.
Don't apply the glaze until the very end of cooking to prevent the honey from burning.
Adjust the amount of hot sauce to suit your personal preference for spice.
