  • 2 medium zucchini about 1 lb total
  • 2 tbsp olive oil
  • 1/3 cup grated Parmesan cheese freshly grated is best
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash, dry, and trim the ends of the zucchini. Slice into 1/2-inch thick rounds.
  3. In a large bowl, toss the zucchini rounds with olive oil. In a separate small bowl, combine the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Sprinkle the seasoning mix over the zucchini and toss until evenly coated.
  4. Spread the zucchini in a single, even layer on the prepared baking sheet. Do not overcrowd the pan. Bake for 15-20 minutes, flipping once halfway through, until tender and the coating is golden brown and crispy.
  5. Remove from the oven and serve immediately for the best texture.

Notes

For Crispier Zucchini: Ensure the zucchini slices are in a single layer and not touching on the baking sheet.
