Banana Blondies
  • 1/2 cup unsalted butter melted
  • 1 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 large very ripe banana mashed (about 1/2 cup)
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or chopped nuts optional

Instructions
 

  1. Preheat oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk the melted butter with the brown sugar and granulated sugar until combined. Whisk in the egg and vanilla extract until smooth. Stir in the mashed banana.
  3. Add the flour, baking powder, and salt to the wet ingredients. Fold with a spatula until just combined. Do not overmix.
  4. If using, gently fold in the chocolate chips or chopped nuts.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. Let the blondies cool completely in the pan on a wire rack before lifting out and slicing into 16 squares.

Notes

For the best flavor, use a very ripe banana with lots of brown spots.
