  • 1 cup Granulated Sugar 200g
  • 1/2 cup Dutch-Processed Cocoa Powder 45g
  • 2 large Eggs Room temperature
  • 1/2 cup All-Purpose Flour 65g
  • 1 cup Overripe Bananas 225g, mashed
  • 1/4 cup Unsalted Butter 55g, melted
  • 1/2 cup Granulated Sugar 100g
  • 1 large Egg
  • 1 cup All-Purpose Flour 125g
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda

Equipment

  • 1 8x8 inch square baking pan Ensures the thick layers seen in the photos.
  • 1 Parchment paper Used as a sling for easy removal.

Instructions
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large bowl, whisk melted butter and sugar. Add eggs and vanilla, whisking for 1 minute. Fold in cocoa powder, flour, and salt until just combined. Spread into the pan.
  3. In a medium bowl, whisk mashed bananas, melted butter, sugar, egg, and vanilla. Fold in flour, baking powder, baking soda, and salt until combined.
  4. Dollop banana batter over the brownie layer. Use a knife to swirl the center line. Bake for 35-40 minutes until the top has a thin matte crust. Cool completely before slicing.

Notes

Use bananas with black spots for the best flavor and visible specks.
Do not over-swirl if you want distinct layers in your Banana Bread Brownies.
