Prepare and Sear Chicken
- Pat chicken medallions dry and season with salt, cracked black pepper, and dried herbs.
- Heat oil in skillet over medium-high heat. Sear chicken for 3-4 minutes per side until a deep golden-brown char forms. Remove and set aside.
Cook the Orzo
- Add butter to the same skillet and toast orzo for 2 minutes until lightly browned.
- Add chicken broth, bring to a boil, then cover and simmer on low for 8-10 minutes until orzo is tender.
Finish the Sauce
- Stir in the Boursin cheese until a velvety sauce forms. Fold in the spinach until wilted.
- Return chicken to the pan, garnish with fresh parsley, and serve immediately.
