Ingredients

Fries and Chicken
  • 28 oz frozen french fries shoestring or crinkle-cut
  • 1 lb boneless, skinless chicken breasts cooked and shredded
Buffalo Sauce
  • 1/2 cup Frank's RedHot Original Sauce
  • 3 tbsp unsalted butter
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
Toppings and Assembly
  • 2 cups shredded cheese a blend of Monterey Jack and cheddar is great
  • 1/4 cup chopped green onions
  • 1/4 cup ranch or blue cheese dressing for drizzling

Equipment

  • 1 Baking sheet
  • 1 Cast-Iron Skillet or Oven-Safe Platter
  • 1 Small saucepan

Instructions

  1. Spread the frozen fries in a single layer on a large baking sheet. Bake according to the package directions, or until golden brown and extra crispy.
  2. While the fries bake, ensure your chicken is cooked and shredded. A rotisserie chicken works well here.
  3. In a small saucepan over medium-low heat, melt the butter. Whisk in the hot sauce, Worcestershire sauce, and garlic powder until simmering.
  4. In a bowl, toss the shredded chicken with about two-thirds of the warm buffalo sauce until evenly coated.
  5. Once fries are crispy, arrange them in a cast-iron skillet or an oven-safe platter. Top with half the shredded cheese, followed by the buffalo chicken, and then the remaining cheese.
  6. Bake for 5-7 minutes at the same temperature, or until the cheese is fully melted and bubbly.
  7. Remove from the oven. Drizzle with ranch or blue cheese dressing, the reserved buffalo sauce, and garnish with chopped green onions. Serve immediately.

Notes

For the crispiest fries, make sure they are in a single layer on the baking sheet and cook them a few minutes longer than the package suggests.
Grating your own cheese from a block will result in a much smoother, creamier melt.
