Carrot Cake Energy Bites (Easy, Healthy & No-Bake)

These no-bake Carrot Cake Energy Bites are a healthy, delicious, and easy-to-make snack. Packed with oats, carrots, dates, and warm spices, they taste just like the classic dessert and are perfect for meal prep.

Ingredients
  

  • 1 cup old-fashioned rolled oats Use certified gluten-free if necessary
  • 1/2 cup raw walnuts or pecans
  • 1 cup pitted Medjool dates Soak in hot water for 10 mins if dry
  • 1 cup shredded carrots Packed
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp sea salt

Equipment

  • 1 Food processor
  • 1 Baking sheet

Instructions
 

  1. Pulse the shredded carrots in a food processor until finely minced. Transfer to a bowl and set aside.
  2. Add the rolled oats and walnuts to the food processor and pulse until a coarse, crumbly meal forms.
  3. Add the minced carrots back to the food processor along with the pitted dates, maple syrup, vanilla, cinnamon, nutmeg, ginger, and salt.
  4. Process until a thick, sticky dough forms that holds together when pinched.
  5. Scoop approximately 1 tablespoon of the mixture at a time and roll into balls.
  6. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up before serving.

Notes

Storage: Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
Variations: Roll the bites in shredded coconut or add a scoop of vanilla protein powder for an extra boost.
