- Pulse the shredded carrots in a food processor until finely minced. Transfer to a bowl and set aside.
- Add the rolled oats and walnuts to the food processor and pulse until a coarse, crumbly meal forms.
- Add the minced carrots back to the food processor along with the pitted dates, maple syrup, vanilla, cinnamon, nutmeg, ginger, and salt.
- Process until a thick, sticky dough forms that holds together when pinched.
- Scoop approximately 1 tablespoon of the mixture at a time and roll into balls.
- Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up before serving.
