  • 1 lb (454g) Ground Beef 80/20 lean-to-fat ratio
  • 1.5 cups (170g) Sharp Cheddar Cheese Freshly shredded
  • 0.5 cup (75g) Dill Pickles Finely diced and dried
  • 12 large Eggroll Wrappers Flour-based
  • 1 quart (946ml) Frying Oil Peanut or Canola oil
  • 0.5 cup (120ml) Mayonnaise
  • 2 tbsp (30ml) Ketchup
  • 1 tsp (2g) Black Pepper Freshly cracked

Equipment

  • 1 Heavy-Bottomed Dutch Oven For deep frying
  • 1 Digital Probe Thermometer To monitor oil temperature
  • 1 Wire cooling rack To maintain crispness

Instructions
 

Prepare the Filling
  1. Sauté ground beef and onions in a skillet until deep brown crumbles form. Drain fat completely.
  2. Stir in salt, garlic powder, and pepper. Allow the mixture to cool to room temperature.
Assembly and Frying
  1. Place beef, cheese, and pickles in the center of a wrapper. Fold and seal tightly with egg wash.
  2. Fry at 350°F (175°C) until golden brown and covered in micro-bubbles. Drain on a wire rack.

Notes

Always use a thermometer to keep oil at 350°F.
Pat pickles dry to ensure the wrappers stay crispy.
