- In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between, until smooth. Set aside to cool slightly.
- In a large mixing bowl, use an electric mixer to beat the softened butter until it is light and fluffy, about 2-3 minutes.
- Sift the powdered sugar and cocoa powder directly into the bowl with the butter. Mix on low speed until just combined, then increase the speed to medium-high and beat for another 2 minutes until smooth.
- Add the slightly cooled melted chocolate and vanilla extract to the butter mixture. Beat on medium speed until everything is well combined and the filling is uniform in color.
- With the mixer on low, slowly stream in the heavy cream. Once it's all added, increase the speed to high and whip for 2-3 minutes, until the filling is light, fluffy, and holds its shape.
Notes
Ensure all your cold ingredients, especially the butter, are at room temperature for the smoothest result.
If the filling is too thick, add more cream 1 tbsp at a time. If too thin, add more powdered sugar 1/4 cup at a time.
