Ingredients
  

  • 1 cup Medjool dates pitted
  • 1 cup raw almonds
  • 1/2 cup unsweetened shredded coconut plus more for rolling
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon sea salt

Instructions
 

  1. Add the almonds to the bowl of a food processor and pulse until they are broken down into a coarse, crumbly texture.
  2. Add the pitted Medjool dates, 1/2 cup of shredded coconut, cocoa powder, vanilla extract, and sea salt to the food processor.
  3. Process all ingredients for 1-2 minutes until a thick, sticky dough forms that holds together when pressed.
  4. Scoop about one tablespoon of the mixture at a time and roll it between your hands to form a ball. Place on a parchment-lined baking sheet.
  5. Roll each ball in a shallow bowl of extra shredded coconut until evenly coated.
  6. Refrigerate the date balls for at least 30 minutes to allow them to firm up before serving.

Notes

Soaking Dates: If your dates are dry, soak them in hot water for 10 minutes, then drain thoroughly before use.
