- In a food processor, combine the rolled oats and cashews. Pulse until a coarse, sandy texture forms.
- Add the pitted dates, 1/2 cup of shredded coconut, lemon zest, lemon juice, vanilla, and sea salt. Process on high for 1-2 minutes until a sticky dough forms and clumps together.
- Scoop approximately 1.5 tablespoons of the mixture and roll it into a ball between your hands.
- Place the remaining 1/2 cup of shredded coconut in a small bowl. Roll each ball in the coconut to coat evenly.
- Place the energy balls on a parchment-lined plate and chill in the refrigerator for at least 30 minutes to firm up before serving.
