  • 1 cup Full-Fat Cottage Cheese (225g) 4% milkfat is recommended
  • 1 large Egg
  • 1/4 cup Grated Parmesan Cheese (25g)
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/4 cup Marinara Sauce (60ml) Use a quality, low-sugar sauce
  • 1/2 cup Shredded Low-Moisture Mozzarella Cheese (56g)
  • 1/4 cup Mini Pepperoni Slices (35g)
  • 1 pinch Dried Oregano For garnish
  • 1 pinch Crushed Red Pepper Flakes For garnish, optional

  • 1 10-12 ounce ramekin Or any small oven-safe dish
  • 1 Blender or Food Processor

Instructions
 

  1. Preheat oven to 400°F (200°C). In a blender, combine cottage cheese, egg, Parmesan, Italian seasoning, and garlic powder. Blend until completely smooth. Pour into a greased 10-12 oz ramekin.
  2. Bake the cottage cheese base for 15 minutes, until the edges are set and slightly puffed.
  3. Carefully remove the ramekin from the oven. Spread the marinara sauce over the base. Top with shredded mozzarella and arrange the pepperoni slices.
  4. Return to the oven and bake for another 10-12 minutes. For a browner, bubbly top, switch to broil for the last 1-2 minutes, watching carefully.
  5. Let rest for a few minutes. Garnish with a sprinkle of dried oregano and crushed red pepper flakes before serving.
