Ingredients

  • 2 cups full-fat cottage cheese Do not use low-fat.
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 large egg
  • 1/2 cup marinara sauce Use a low-sugar variety.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup turkey pepperoni

Equipment

  • 1 8x8-inch baking dish
  • 1 Mixing Bowl

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease an 8x8-inch baking dish.
  2. In a medium bowl, combine the cottage cheese, Parmesan cheese, Italian seasoning, garlic powder, onion powder, and the egg. Stir until well incorporated.
  3. Spread the cottage cheese mixture evenly into the bottom of the prepared baking dish.
  4. Bake for 15 minutes to allow the base to set.
  5. Remove the dish from the oven. Spread the marinara sauce over the base, then sprinkle with mozzarella cheese and top with pepperoni.
  6. Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before slicing and serving.

Notes

Use Full-Fat Cottage Cheese: This is crucial for a creamy, non-watery bake. Low-fat varieties have higher water content and won't set as well.
Don't Skip the First Bake: Baking the base first is essential to cook off excess moisture and create a firm foundation.
Customize Your Toppings: Feel free to add your favorite pizza toppings like cooked sausage, mushrooms, bell peppers, or onions.
