Ingredients
  

  • 2 large boneless, skinless chicken breasts pounded to ½-inch even thickness
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsalted butter
  • 4 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes or more, to taste

Equipment

  • 1 Large Skillet A cast iron skillet is recommended for the best sear.
  • 1 Meat Mallet For pounding chicken to an even thickness.

Instructions
 

  1. Pat the chicken breasts dry with a paper towel. Season both sides generously with salt, black pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F). Remove from skillet and set aside.
  3. Reduce heat to medium. Add the butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 30 seconds. Stir in the lemon zest, lemon juice, Dijon mustard, parsley, chives, thyme, smoked paprika, and red pepper flakes. Simmer for 1-2 minutes.
  4. Return the chicken to the skillet, spooning the sauce over the top. Serve immediately.

Notes

Tip 1: For the best sear, make sure your skillet is hot before adding the chicken and don't overcrowd the pan.
Tip 2: Use a wooden spoon to scrape up the flavorful browned bits from the bottom of the pan when making the sauce.
Tip 3: Fresh herbs and lemon juice are highly recommended for the most vibrant flavor.
