  • 1/4 cup (10g) Fresh Parsley Finely chopped

Instructions
 

Preparation
  1. Remove ribeyes from the fridge 45 minutes before cooking. Pat extremely dry with paper towels.
  2. Coat all sides of the steak with sea salt and cracked black pepper, pressing firmly to adhere.
The Sear
  1. Get the cast iron skillet screaming hot with avocado oil until it just begins to smoke.
  2. Place steaks in pan. Sear for 3-4 minutes per side until a deep mahogany crust forms and internal temp is 130°F (54°C).
  3. Transfer to a wooden cutting board and rest for 10 minutes.
The Butter
  1. Melt butter over low heat. Stir in garlic, paprika, and red pepper flakes until the butter turns vibrant orange-gold.
  2. Remove from heat and stir in fresh parsley. Dollop generously over sliced steak.

Notes

Ensure the steak is dry before searing or it will steam instead of crusting.
Use a digital thermometer to hit exactly 130°F for that perfect pink center.
