  • 2 large Chicken Breasts boneless and skinless (approx. 450g)
  • 1 lb Asparagus trimmed (450g)
  • 1 cup Heavy Cream 240ml
  • 3 cloves Garlic minced
  • 1/2 cup Parmesan Cheese 50g, grated
  • 1 cup Mozzarella Cheese 115g, shredded
  • 1 tsp Red Chili Flakes dried
  • 2 tbsp Fresh Parsley 8g, finely chopped

Equipment

  • 1 Heavy-bottomed skillet Cast iron preferred for searing
  • 1 White Ceramic Baking Dish 9x13 inch rectangular dish
  • 1 Whisk

Instructions
 

Searing the Chicken
  1. Preheat oven to 400°F (200°C). Pat chicken breasts dry and season with salt and pepper.
  2. Heat oil in skillet over medium-high. Sear chicken for 4-5 minutes per side until visible golden-brown sear marks appear. Remove and set aside.
Making the Sauce & Assembly
  1. Lower heat, add butter and garlic. Whisk in heavy cream and parmesan until thick and bubbly.
  2. Place chicken in the white ceramic dish. Arrange asparagus spears alongside. Pour sauce over chicken and top with mozzarella.
Baking
  1. Bake for 12-15 minutes until cheese is bubbly and asparagus tips are slightly charred.
  2. Top with red chili flakes and fresh parsley before serving.

Notes

Ensure chicken is patted dry for the best sear.
Rest the dish for 5 minutes before serving to allow the sauce to set.
