Ingredients
  

  • 2 heads Garlic Tops sliced off
  • 2 tbsp Olive Oil plus more for drizzling
  • 1 lb Pasta such as fettuccine or linguine
  • 1 cup Heavy Cream or full-fat coconut milk
  • 0.5 cup Vegetable Broth
  • 1 Lemon zested and juiced
  • 0.75 cup Parmesan Cheese freshly grated
  • 0.25 cup Fresh Parsley chopped
  • 0.5 tsp Red Pepper Flakes optional
  • Salt and Black Pepper to taste

Instructions
 

  1. Preheat oven to 400°F (200°C). Slice the tops off the garlic heads, place on foil, drizzle with olive oil, salt, and pepper. Wrap tightly and roast for 40-45 minutes until soft and golden.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 2 cups of pasta water before draining.
  3. Let garlic cool slightly. Squeeze the roasted cloves into a blender with vegetable broth, heavy cream, lemon juice, and lemon zest. Blend until completely smooth.
  4. Pour the sauce into a large skillet over medium heat. Bring to a simmer. Stir in the Parmesan cheese until melted. Season with salt, pepper, and red pepper flakes.
  5. Add the drained pasta to the sauce. Toss to coat, adding reserved pasta water as needed to reach desired consistency. Stir in fresh parsley and serve immediately.

Pasta Water: Don't skip reserving the pasta water! It's essential for creating a silky sauce that clings perfectly to the pasta.
Variations: Feel free to add grilled chicken, shrimp, or sautéed spinach to make this a complete meal.
