  • 12 whole Medjool dates pitted
  • 1/4 cup creamy natural peanut butter
  • 1/4 cup roasted peanuts unsalted
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 teaspoon flaky sea salt

Instructions
 

  1. Slice each Medjool date lengthwise without cutting all the way through. Remove the pit and arrange the dates cut-side up on a parchment-lined tray.
  2. Spoon about 1 teaspoon of creamy peanut butter into the cavity of each date.
  3. Press a few roasted peanuts into the peanut butter. Place the tray in the freezer for 10-15 minutes for the dates to firm up.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second bursts, stirring in between, until fully melted and smooth.
  5. Dip each chilled date into the melted chocolate, ensuring it's fully coated. Place it back on the parchment paper and immediately sprinkle with flaky sea salt. Repeat for all dates.
  6. Refrigerate or freeze for 15-20 minutes, or until the chocolate shell is completely hardened. Serve chilled.
