- Slice each Medjool date lengthwise without cutting all the way through. Remove the pit and arrange the dates cut-side up on a parchment-lined tray.
- Spoon about 1 teaspoon of creamy peanut butter into the cavity of each date.
- Press a few roasted peanuts into the peanut butter. Place the tray in the freezer for 10-15 minutes for the dates to firm up.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second bursts, stirring in between, until fully melted and smooth.
- Dip each chilled date into the melted chocolate, ensuring it's fully coated. Place it back on the parchment paper and immediately sprinkle with flaky sea salt. Repeat for all dates.
- Refrigerate or freeze for 15-20 minutes, or until the chocolate shell is completely hardened. Serve chilled.
