Ingredients
  

  • 3 cups cooked shredded chicken a rotisserie chicken works great
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 oz) Rotel diced tomatoes & green chiles drained well
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded cheddar cheese divided
  • 4 cups Nacho Cheese Doritos coarsely crushed and divided

  • 1 9x13 inch Baking Dish
  • 1 Large Mixing Bowl

Instructions
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, drained Rotel, and taco seasoning. Mix thoroughly.
  3. Spread half of the chicken mixture into the prepared baking dish. Top with half of the crushed Doritos (2 cups) and half of the shredded cheese (1 cup).
  4. Layer the remaining chicken mixture over the top, followed by the remaining 1 cup of cheese.
  5. Bake uncovered for 20-25 minutes, until hot and bubbly.
  6. Remove from the oven, top with the remaining 2 cups of crushed Doritos, and bake for an additional 5 minutes to toast the chips.
  7. Let the casserole rest for 5 minutes before serving.

Notes

Tip 1: For the crunchiest topping, be sure to add the final layer of Doritos in the last 5 minutes of baking.
Tip 2: Try using different flavors of Doritos, like Cool Ranch or Spicy Nacho, to change up the flavor profile.
Tip 3: A freshly shredded block of cheese will melt much more smoothly than pre-shredded varieties.
