- Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper. Cook for 4-5 minutes, until they begin to soften. Stir in the minced garlic and cook for 1 more minute until fragrant.
- Add the ground turkey to the skillet. Use a spatula to break it apart and cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the diced zucchini, undrained diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a simmer. Reduce heat to medium-low, cover, and cook for 10-12 minutes, until zucchini is tender-crisp.
- Remove from heat. Stir in the optional grated Parmesan cheese. Serve hot.
