- Pat the chicken breasts dry and season with salt, pepper, paprika, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden. Set aside.
- Add the chopped onion to the skillet and cook for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Add the rinsed rice to the skillet and stir for 1 minute to lightly toast.
- In a bowl, whisk together the BBQ sauce and honey. Pour half of this sauce and all the chicken broth into the skillet. Stir, scraping up any browned bits.
- Bring the liquid to a simmer. Return the chicken to the skillet. Reduce heat to low, cover, and cook for 18-20 minutes, or until liquid is absorbed and rice is tender.
- Remove from heat. Brush the remaining honey BBQ sauce over the chicken. Let it rest, covered, for 5 minutes. Fluff rice, garnish with parsley, and serve.

Make sure to rinse your rice thoroughly to prevent it from becoming gummy.
