Honey BBQ Chicken Rice: A 45-Minute One-Pan Meal

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces or left whole
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup BBQ sauce your favorite brand
  • 1/4 cup honey
  • 1 medium yellow onion finely chopped
  • 3 cloves garlic minced
  • 1.5 cups long-grain white rice rinsed well
  • 2.5 cups chicken broth low sodium
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  1. Pat the chicken breasts dry and season with salt, pepper, paprika, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden. Set aside.
  2. Add the chopped onion to the skillet and cook for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  3. Add the rinsed rice to the skillet and stir for 1 minute to lightly toast.
  4. In a bowl, whisk together the BBQ sauce and honey. Pour half of this sauce and all the chicken broth into the skillet. Stir, scraping up any browned bits.
  5. Bring the liquid to a simmer. Return the chicken to the skillet. Reduce heat to low, cover, and cook for 18-20 minutes, or until liquid is absorbed and rice is tender.
  6. Remove from heat. Brush the remaining honey BBQ sauce over the chicken. Let it rest, covered, for 5 minutes. Fluff rice, garnish with parsley, and serve.

Notes

Make sure to rinse your rice thoroughly to prevent it from becoming gummy.
For a deeper flavor, allow the chicken to marinate in the spices for at least 30 minutes before cooking.
Do not lift the lid while the rice is simmering to ensure it steams properly.
