Main Ingredients
  • 1.5 lbs boneless skinless chicken thighs cut into 1-inch chunks
  • 1 cup cornstarch for dredging
  • 1/2 cup unsalted butter 115g
  • 1/2 cup honey 170g
  • 2 tbsp soy sauce 30ml
  • 1.5 cups mozzarella cheese shredded, low-moisture
  • 2 cups jasmine rice cooked/steamed
  • 3 stalks scallions chopped for garnish

Equipment

  • 1 Square ceramic baking dish 9x9 inch preferred
  • 1 Deep skillet or Dutch oven For frying chicken
  • 1 Small saucepan For the honey butter glaze

Instructions
 

Prepare the Chicken
  1. Pat chicken dry and toss in cornstarch until fully coated. Shake off excess.
  2. Heat oil to 350°F (175°C) and fry chicken pieces for 5-7 minutes until deep golden brown and crispy.
The Sauce and Assembly
  1. Simmer butter, honey, and soy sauce in a saucepan for 3-4 minutes until thick, glossy, and dark amber.
  2. Layer cooked rice in a ceramic dish. Toss chicken in glaze and place over rice. Top with mozzarella.
  3. Broil on high for 2-4 minutes until cheese is bubbly and has toasted brown spots. Garnish with scallions.

Notes

Ensure chicken is patted dry for the crispest coating.
Watch the broiler closely to prevent burning the cheese.
