Ingredients
  

For the Salmon Bites
  • 1.5 lbs skinless salmon cut into 1-inch cubes
  • 2 tbsp cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
For the Hot Honey Glaze
  • 0.33 cup honey
  • 2 tbsp Sriracha or other hot sauce
  • 1 tbsp low-sodium soy sauce
  • 2 cloves garlic freshly minced
  • 0.25 tsp red pepper flakes optional

  • 1 Air Fryer or Oven
  • 2 Mixing Bowls
  • 1 Small saucepan

Instructions
 

  1. Pat the salmon cubes completely dry with a paper towel and place them in a medium bowl.
  2. In a small bowl, whisk together cornstarch, paprika, garlic powder, salt, and pepper. Sprinkle over the salmon and toss to coat evenly. Drizzle with olive oil and toss again.
  3. Cook the salmon. Air Fryer: Preheat to 400°F (200°C). Cook in a single layer for 8-10 minutes, shaking halfway. Oven: Preheat to 400°F (200°C). Bake on a parchment-lined sheet for 10-12 minutes.
  4. While salmon cooks, make the glaze. Combine honey, hot sauce, soy sauce, and minced garlic in a small saucepan. Warm over medium-low heat for 3-4 minutes until smooth. Do not boil.
  5. Transfer the cooked salmon to a large bowl. Pour the warm glaze over top and toss gently to coat.
  6. Garnish with sesame seeds and sliced green onions, and serve immediately.

Notes

Patting the salmon very dry is the most important step for getting a crispy exterior.
Do not overcrowd the air fryer basket or baking sheet; cook in batches if necessary.
Toss the cooked salmon in the glaze right before serving to maintain maximum crispiness.
