- Pat chicken thighs dry. Season generously with salt, cracked black pepper, and dried oregano to create an herb crust.
- Heat 2 tbsp olive oil in cast iron skillet. Sear chicken skin-side down for 6-8 minutes until golden-brown and crispy. Flip and cook for 2 minutes. Remove and set aside.
- Add diced red onion to the pan, sauté for 2 minutes. Add orzo and toast for 2 minutes until golden-hued.
- Add chicken broth and lemon juice. Return chicken to the pan. Cover and simmer for 10-12 minutes until orzo is tender.
- Stir in spinach until wilted. Top with charred lemon slices, crumbled feta, fresh parsley, and a final drizzle of olive oil.
