Ingredients

  • 1 bone-in turkey breast (4 to 6 pounds) Pat dry completely before seasoning.
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup pure maple syrup Do not use pancake syrup.
  • 1/4 cup unsalted butter melted
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped

Equipment

  • 1 Roasting pan
  • 1 Meat thermometer
  • 1 Basting brush

Instructions

  1. Preheat oven to 350°F (175°C). Pat the turkey breast dry with paper towels. Place it in a roasting pan. Rub the turkey all over with olive oil, salt, and pepper.
  2. In a small bowl, whisk together the melted butter, maple syrup, Dijon mustard, apple cider vinegar, minced garlic, thyme, and rosemary.
  3. Roast the turkey uncovered for 60 minutes.
  4. Brush a generous layer of the glaze over the turkey. Return to the oven. Continue roasting for 25-30 minutes, brushing with more glaze every 10 minutes, until a meat thermometer reads 165°F (74°C).
  5. Remove the turkey from the oven, tent with foil, and let it rest for 15-20 minutes before slicing and serving.

Notes

Using a meat thermometer is crucial for ensuring the turkey is cooked perfectly without drying out.
Letting the turkey rest is a non-negotiable step for a juicy result.
