- Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper. In a large bowl, whisk together the melted butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, sift the flour, cocoa powder, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- In a small bowl, mix the creamy peanut butter and powdered sugar until smooth. Pour the brownie batter into the prepared pan. Drop spoonfuls of the peanut butter mixture over the batter, then use a knife to gently swirl it in.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Remove the brownies from the oven and immediately top with the mini marshmallows. Return to the oven for 2-3 minutes until the marshmallows are puffed. For a toasted top, broil for 30-60 seconds, watching closely.
- Let the brownies cool completely in the pan on a wire rack before lifting them out with the parchment paper handles. For best results and clean cuts, chill for at least 1 hour before slicing.
Notes
For Fudgy Brownies: Be careful not to overbake the brownie base before adding the marshmallows. A few moist crumbs on the toothpick is perfect.
