Preparation
- Remove the tenderloin from the fridge 60 minutes before cooking. Pat extremely dry and tie with twine.
- Generously season all sides of the beef with coarse sea salt and cracked black pepper.
The Sear
- Heat oil in a skillet over medium-high heat. Sear the beef for 3-4 minutes per side until a dark crust forms.
- Add butter, garlic, and dried rosemary to the pan. Baste the bubbling butter over the meat for 2 minutes.
The Roast & Rest
- Transfer the skillet to a 400°F (200°C) oven. Roast until the internal temperature hits 125°F (52°C).
- Remove meat to a board and rest for 15 minutes before removing twine and slicing into thick medallions.
Notes
Always use a meat thermometer; 125°F is the sweet spot for medium-rare after resting.
