Ingredients
  

Chocolate Layer
  • 12 oz semi-sweet chocolate chips Good quality chips work best
  • 1 cup sweetened condensed milk divided
  • 2 tbsp unsalted butter divided
Mint Layer
  • 12 oz white chocolate chips
  • 1/2 cup sweetened condensed milk
  • 2 tbsp unsalted butter
  • 1 tsp mint extract Not peppermint extract
  • 3 drops green food coloring or to desired color

Equipment

  • 1 8x8 inch baking pan
  • 2 Microwave-safe bowls
  • 1 Parchment paper

Instructions
 

  1. Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides to act as handles.
  2. In a medium microwave-safe bowl, combine the semi-sweet chocolate chips, 1 cup of sweetened condensed milk, and 2 tablespoons of butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Pour the chocolate mixture into the prepared pan and spread into an even layer.
  4. In a separate microwave-safe bowl, combine the white chocolate chips, the remaining 1/2 cup of sweetened condensed milk, and the remaining 2 tablespoons of butter. Microwave in 30-second intervals, stirring well, until smooth.
  5. Stir the mint extract and green food coloring into the melted white chocolate mixture.
  6. Carefully pour the green mint mixture over the chocolate layer and spread evenly.
  7. Refrigerate for at least 4 hours, or until the fudge is completely firm, before lifting out and slicing into squares.

Notes

For ultra-clean cuts, run a sharp knife under hot water and wipe it dry between each slice.
Store fudge in an airtight container at room temperature for up to 1 week.
