- Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides to act as handles.
- In a medium microwave-safe bowl, combine the semi-sweet chocolate chips, 1 cup of sweetened condensed milk, and 2 tablespoons of butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Pour the chocolate mixture into the prepared pan and spread into an even layer.
- In a separate microwave-safe bowl, combine the white chocolate chips, the remaining 1/2 cup of sweetened condensed milk, and the remaining 2 tablespoons of butter. Microwave in 30-second intervals, stirring well, until smooth.
- Stir the mint extract and green food coloring into the melted white chocolate mixture.
- Carefully pour the green mint mixture over the chocolate layer and spread evenly.
- Refrigerate for at least 4 hours, or until the fudge is completely firm, before lifting out and slicing into squares.
Notes
For ultra-clean cuts, run a sharp knife under hot water and wipe it dry between each slice.
