  • 1 cup creamy peanut butter 250g, no-stir style recommended
  • 1/2 cup unsalted butter 115g, softened
  • 3/4 cup light brown sugar 150g, packed
  • 1/4 cup granulated sugar 50g
  • 1 large egg room temperature
  • 1 tsp vanilla extract 5ml

Instructions
 

Dough Preparation
  1. In a large bowl, beat the softened butter, peanut butter, brown sugar, and white sugar until light and fluffy (about 3 minutes).
  2. Mix in the egg and vanilla extract until fully combined and smooth.
  3. Gradually add the oat flour, baking soda, and salt. Mix until a matte, slightly crumbly dough forms.
Shaping and Baking
  1. Roll the dough into 2-tablespoon sized balls and place on a parchment-lined baking sheet.
  2. Use a fork to press a crisscross pattern into the top of each cookie, flattening them slightly.
  3. Bake at 350°F (175°C) for 9-11 minutes until the edges are golden-brown but the centers remain soft.

Notes

Allow cookies to cool on the baking sheet for 5 minutes before moving to a wire rack to ensure the soft-baked center sets properly.
If making homemade oat flour, ensure it is processed into a fine powder to avoid a gritty texture.
