Ingredients
  

Golden Cake Layers
  • 3 cups all-purpose flour 360g
  • 1 1/2 cups granulated sugar 300g
  • 1 cup light brown sugar 200g, packed
  • 1 cup creamy peanut butter 250g
  • 1 cup unsalted butter 225g, softened
  • 4 large eggs Room temperature
  • 1 1/2 cups buttermilk 360ml
  • 2 tsp baking powder 10g
  • 1 tsp baking soda 6g
  • 1 tbsp vanilla extract 15ml
Frosting and Toppings
  • 1 1/2 cups unsalted butter 340g, softened
  • 3/4 cup creamy peanut butter 185g
  • 4-5 cups powdered sugar 500-625g
  • 3 tbsp heavy cream 45ml
  • 2 tbsp creamy peanut butter For drizzle
  • 1/2 cup roasted peanuts 75g, finely chopped

Equipment

  • 3 8-inch round cake pans Greased and lined with parchment.
  • 1 Stand Mixer With paddle and whisk attachments.
  • 1 Offset Spatula For smooth frosting finish.

Instructions
 

Bake the Layers
  1. Preheat oven to 350°F (175°C) and prep three 8-inch pans.
  2. Cream butter and sugars until fluffy, then beat in peanut butter and eggs.
  3. Alternately add dry ingredients and buttermilk; mix until just combined.
  4. Divide batter and bake for 28-32 minutes until golden tan.
Frost and Assemble
  1. Whip butter, PB, sugar, and cream until pale tan and fluffy.
  2. Layer cake with frosting, cover exterior, and add decorative swirls on top.
  3. Melt PB and drizzle over swirls; sprinkle with chopped peanuts.

Notes

Ensure all ingredients are room temperature to avoid a broken batter.
Use a commercial peanut butter brand for the most stable buttercream results.
