Prepare the Fruit
- Core and peel the fresh pineapple, then cut into large 1-inch (2.5cm) chunks.
- Thinly slice the limes into rounds, removing any visible seeds.
Mix and Infuse
- In a large clear pitcher, combine pineapple chunks, lime rounds, simple syrup, and rum. Toss gently.
- Slap the mint leaves between your palms to release oils and add them to the pitcher.
- Add the white wine and pineapple juice. Stir gently to combine until the liquid is a uniform pale golden color.
Chill and Serve
- Chill in the refrigerator for at least 2 hours to allow the tropical flavors to meld.
- Just before serving, add large clear ice cubes to the pitcher and pour into stemmed wine glasses.
Notes
Always use fresh pineapple for the best visual texture; canned fruit can appear dull.
