  • 2 large Buttery Biscuits Split in half
  • 2 tbsp Unsalted Butter Melted (28g)
  • 1/2 lb Pink Shrimp Cooked, tail-off, deveined (225g)
  • 6 oz Lump White Crab Meat Drained and picked for shells (170g)
  • 1/2 cup Heavy Cream 120ml
  • 2 tbsp Mayonnaise 30g
  • 1.5 cups Sharp Cheddar Cheese Freshly shredded (150g)
  • 2 tbsp Fresh Chives Finely chopped (5g)
  • 1/2 tsp Red Paprika Or Old Bay (1g)

Equipment

  • 1 Rimmed Baking Sheet Lined with parchment paper
  • 1 Mixing Bowl Medium sized
  • 1 Chef's knife For chopping chives

Instructions
 

Preparation and Toasting
  1. Preheat oven to 400°F (200°C). Place split biscuits on a baking sheet, brush with melted butter, and toast for 4-5 minutes until light golden.
Seafood Assembly
  1. In a bowl, combine heavy cream and mayo. Gently fold in shrimp and lump crab meat until coated but chunks remain intact.
  2. Spoon the seafood mixture generously onto each toasted biscuit half.
The Perfect Melt
  1. Top each mound with shredded cheddar. Broil on high for 2-3 minutes until cheese is bubbling and shows toasted brown spots.
  2. Remove from oven, dust with paprika and sprinkle with fresh chives. Serve immediately while hot.

Notes

Keep the crab lumps large for the best texture.
Watch the broiler constantly to avoid burning the cheese.
