Prepare the Stock and Base
- Sauté shrimp shells in 1 tbsp (14g) butter until pink and aromatic. Simmer with 1 cup (240ml) water for 10 minutes, then strain and reserve the liquid.
- In the same pot, melt remaining butter and sauté onion, carrots, and celery until soft. Stir in tomato paste and cook for 2 minutes until dark orange.
Thicken and Blend
- Stir in flour, then deglaze with cognac. Add stock and reserved shell liquid. Simmer for 20 minutes.
- Blend the soup until smooth, then pass through a fine-mesh sieve. Stir in 1/2 cup (120ml) heavy cream.
Finish and Serve
- Sear the shrimp meat in a hot skillet until golden-brown edges form and they show distinct pink curls.
- Ladle bisque into bowls, top with seared shrimp, a cream swirl, chives, and cracked black pepper.
