Ingredients
  

For the Stir Fry Sauce
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tsp cornstarch
For the Main Dish
  • 8 oz lo mein noodles or noodles of your choice
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp avocado oil divided
  • 2 cups broccoli florets
  • 1 cup carrots julienned or thinly sliced
  • 1 cup snow peas
  • 1 tbsp sesame seeds for garnish
  • 2 green onions sliced, for garnish

Equipment

  • 1 Large Skillet or Wok
  • 1 Large Pot For cooking noodles
  • 1 Small Bowl For mixing the sauce

Instructions
 

  1. Cook the noodles according to package directions until al dente. Drain and rinse with cold water.
  2. In a small bowl, whisk together all sauce ingredients: soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and cornstarch. Set aside.
  3. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add broccoli and carrots and stir-fry for 3-4 minutes. Add snow peas and cook for 1 more minute. Remove vegetables from the skillet.
  4. Add the remaining 1 tbsp of oil to the skillet. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque.
  5. Return the cooked vegetables to the skillet. Add the drained noodles and pour the prepared sauce over everything.
  6. Toss everything together for 1-2 minutes until the sauce thickens and coats all ingredients. Serve immediately, garnished with sesame seeds and sliced green onions.

Notes

Tip 1: Have all your ingredients prepped and ready before you start cooking, as the stir-fry process goes very quickly.
Tip 2: For a spicy kick, add a teaspoon of sriracha or red pepper flakes to the sauce.
Tip 3: Ensure your skillet is hot before adding ingredients to get a proper sear rather than steaming them.
