- In a small bowl, combine the olive oil, minced garlic, lemon zest, chopped thyme, chopped rosemary, salt, and pepper. Mix well to form a paste.
- Pat the chicken completely dry with paper towels. Gently loosen the skin over the breasts and thighs. Rub the herb mixture all over the outside of the chicken and underneath the skin.
- Arrange the slices from one lemon and a few extra sprigs of herbs on the bottom of the slow cooker.
- Place the seasoned chicken on top of the lemon slices in the slow cooker. Squeeze the juice from the zested lemon over the chicken. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Check that the chicken is cooked through (internal temperature reaches 165°F). Let it rest for 10 minutes before carving and serving.
Notes
For crispy skin, transfer the cooked chicken to a baking sheet and place it under the broiler for 3-5 minutes until golden brown.
