Ingredients
  

For the Strawberry Reduction
  • 1 cup strawberries fresh or frozen, hulled and roughly chopped
  • 2 tbsp granulated sugar
  • 2 tbsp water
  • 1 tsp lemon juice
For the Hot Chocolate
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 4 oz white chocolate high-quality, chopped
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Instructions
 

Step 1: Create the Strawberry Reduction
  1. In a small saucepan, combine the strawberries, sugar, and water. Bring the mixture to a simmer over medium heat, stirring and mashing the strawberries as they cook.
  2. Let the mixture simmer for 10-12 minutes until the strawberries have broken down and the sauce has thickened. Remove from heat and stir in the lemon juice.
  3. For a smoother texture, strain the reduction through a fine-mesh sieve into a bowl, pressing on the solids to extract all the liquid. Discard the seeds.
Step 2: Warm the Milk and Melt the Chocolate
  1. In a medium saucepan, warm the whole milk and heavy cream over medium-low heat until steaming, but not boiling.
  2. Reduce the heat to low, add the chopped white chocolate and salt, and whisk until the chocolate is completely melted and smooth.
Step 3: Combine and Serve
  1. Whisk the prepared strawberry reduction and vanilla extract into the hot white chocolate base until fully combined and evenly colored.
  2. Pour into two mugs and garnish with whipped cream, marshmallows, or fresh strawberries before serving.
