- Preheat your oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin.
- In a large skillet, cook the ground beef, diced onion, and bell pepper over medium-high heat until the meat is browned. Drain any excess grease.
- Reduce heat to low. Stir in the taco seasoning and ranch dressing, and simmer for 2-3 minutes. Remove from heat and let it cool for a few minutes, then stir in the shredded cheese.
- Press one wonton wrapper into each mini muffin cup. Spoon the beef mixture evenly into the wonton cups.
- Bake for 12-15 minutes, until the wonton edges are golden brown and the filling is bubbly.

For an extra crispy texture, lightly spray the wonton wrappers with cooking spray before baking.
