- If you are not using leftover rice, cook the rice according to package directions.
- Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat from the skillet.
- Stir in the taco seasoning and tomato sauce. Reduce heat to low and let it simmer for 3-5 minutes, allowing the flavors to meld.
- To assemble, divide the cooked rice among four bowls. Top with the taco meat, black beans, and corn. Garnish with your favorite toppings and serve immediately.
Notes
Meal Prep: Store the cooked meat and rice in separate airtight containers in the fridge for up to 4 days. Keep toppings separate and add them just before serving.
