Taco Rice Bowl (The Ultimate Easy Recipe)

Ingredients
  

For the Taco Meat
  • 1 lb lean ground beef 85/15 or 90/10 recommended
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning one packet or homemade
  • 1/2 cup tomato sauce
  • 1 tbsp olive oil
For the Bowls
  • 4 cups cooked rice white, brown, or cilantro-lime
  • 1 can (15 oz) black beans rinsed and drained
  • 1 can (15 oz) corn drained
  • Optional Toppings: shredded lettuce, diced tomatoes, shredded cheese, avocado, sour cream, salsa, cilantro

Instructions
 

  1. If you are not using leftover rice, cook the rice according to package directions.
  2. Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat from the skillet.
  4. Stir in the taco seasoning and tomato sauce. Reduce heat to low and let it simmer for 3-5 minutes, allowing the flavors to meld.
  5. To assemble, divide the cooked rice among four bowls. Top with the taco meat, black beans, and corn. Garnish with your favorite toppings and serve immediately.

Notes

Meal Prep: Store the cooked meat and rice in separate airtight containers in the fridge for up to 4 days. Keep toppings separate and add them just before serving.
Homemade Taco Seasoning: Mix 1 tbsp chili powder, 1 ½ tsp cumin, ½ tsp paprika, ½ tsp onion powder, ½ tsp garlic powder, and ¼ tsp salt.
