Thai Basil Beef Rolls (with a Zesty Lime Dipping Sauce)

Ingredients
  

For the Beef Filling
  • 1 lb lean ground beef 90/10 recommended
  • 3 cloves garlic finely minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp soy sauce low sodium
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 cup fresh Thai basil chopped
For the Rolls
  • 12 rice paper wrappers (8-inch diameter)
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro
  • 6 leaves butter lettuce torn in half
For the Zesty Lime Dipping Sauce
  • 1/4 cup fresh lime juice
  • 2 tbsp water
  • 2 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tbsp fish sauce
  • 1/4 tsp red pepper flakes or to taste

Equipment

  • 1 Large Skillet
  • 1 Shallow Dish (for rice paper)
  • 1 Small bowl for sauce

Instructions
 

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart. Drain any excess fat.
  2. Add the minced garlic and ginger, and cook for 1 minute until fragrant.
  3. Stir in the soy sauce, 1 tbsp fish sauce, and brown sugar. Simmer for 2-3 minutes until the sauce thickens. Remove from heat and stir in the chopped Thai basil. Set aside to cool.
  4. In a small bowl, whisk together the lime juice, water, sugar, rice vinegar, 1 tbsp fish sauce, and red pepper flakes for the dipping sauce. Stir until the sugar dissolves.
  5. Fill a shallow dish with warm water. Submerge one rice paper wrapper for 15-20 seconds until pliable. Lay it flat on a damp surface.
  6. On the lower third of the wrapper, layer a piece of lettuce, a spoonful of the beef mixture, carrots, cucumber, mint, and cilantro.
  7. Fold the bottom edge up over the filling, fold in the sides, and roll up tightly. Repeat with remaining ingredients.
  8. Serve immediately with the zesty lime dipping sauce.

Notes

Tip 1: Don't oversoak the rice paper! It will continue to soften as you work.
Tip 2: Work on a damp cutting board or towel to prevent sticking.
Tip 3: To store, place rolls in a single layer in an airtight container separated by parchment paper.
