Ingredients
  

  • 1 lb lean ground beef 90/10 or 85/15
  • 4 cups broccoli florets from about 1 large head
  • 1 tbsp avocado oil or other neutral oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 3 tbsp low-sodium soy sauce or tamari
  • 1 tbsp honey or maple syrup
  • 1 tsp toasted sesame oil
  • 1 cup jasmine rice uncooked
  • 1/2 cup mayonnaise good quality
  • 1-2 tbsp sriracha to taste
  • 1 tsp rice vinegar unseasoned
  • 2 green onions thinly sliced
  • 1 tbsp white sesame seeds toasted

Instructions
 

Prepare Rice and Broccoli
  1. Cook jasmine rice according to package directions, either in a saucepan or rice cooker. While the rice cooks, steam broccoli florets for 3-4 minutes until tender-crisp and bright green. Set aside.
Cook the Ground Beef
  1. Heat avocado oil in a large skillet over medium-high heat. Add ground beef and cook, crumbling, until deeply browned and cooked through, about 5-7 minutes. Drain excess fat.
  2. Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  3. In a small bowl, whisk together soy sauce and honey. Pour the sauce over the beef and stir to coat. Let it bubble for 1-2 minutes to thicken slightly. Remove from heat and stir in the toasted sesame oil.
Make the Spicy Mayo and Assemble
  1. In a small bowl, whisk together mayonnaise, sriracha, and rice vinegar until smooth. Add a teaspoon of water if needed to reach a drizzling consistency.
  2. To assemble, divide the fluffy rice among four bowls. Top with the savory ground beef and the steamed broccoli. Drizzle generously with the spicy mayo. Garnish with sliced green onions and toasted sesame seeds before serving.

Don't Crowd the Pan: For the best browning, ensure your ground beef has enough space in the skillet.
