Prepare Rice and Broccoli
- Cook jasmine rice according to package directions, either in a saucepan or rice cooker. While the rice cooks, steam broccoli florets for 3-4 minutes until tender-crisp and bright green. Set aside.
Cook the Ground Beef
- Heat avocado oil in a large skillet over medium-high heat. Add ground beef and cook, crumbling, until deeply browned and cooked through, about 5-7 minutes. Drain excess fat.
- Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
- In a small bowl, whisk together soy sauce and honey. Pour the sauce over the beef and stir to coat. Let it bubble for 1-2 minutes to thicken slightly. Remove from heat and stir in the toasted sesame oil.
Make the Spicy Mayo and Assemble
- In a small bowl, whisk together mayonnaise, sriracha, and rice vinegar until smooth. Add a teaspoon of water if needed to reach a drizzling consistency.
- To assemble, divide the fluffy rice among four bowls. Top with the savory ground beef and the steamed broccoli. Drizzle generously with the spicy mayo. Garnish with sliced green onions and toasted sesame seeds before serving.
Notes
Don't Crowd the Pan: For the best browning, ensure your ground beef has enough space in the skillet.
Toast Your Sesame Seeds: Add seeds to a dry skillet over medium heat for 2-3 minutes until fragrant and lightly golden.
Control Your Drizzle: Use a squeeze bottle or a plastic bag with the corner snipped for a clean, zig-zag pattern.
Prep Ahead: Chop veggies and mix sauces in advance for an even faster cooking experience.
