  • 1/2 cup (120g) Full-fat sour cream
  • 2 tbsp (30ml) Buttermilk Add more for a thinner consistency
  • 4 ounces (115g) Block blue cheese, crumbled Gorgonzola, Roquefort, or Danish Blue work well
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (5ml) Worcestershire sauce
  • 1/2 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/4 tsp Kosher salt Taste and adjust as needed
  • 1/2 tsp Coarsely cracked black pepper Divided
  • 1 tbsp (4g) Finely chopped fresh chives

Equipment

  • 1 Medium Mixing Bowl
  • 1 Whisk
  • 1 Silicone spatula

Instructions

  1. In a medium mixing bowl, combine the mayonnaise, sour cream, buttermilk, lemon juice, Worcestershire sauce, garlic powder, onion powder, salt, and half of the cracked black pepper. Whisk vigorously until the mixture is completely smooth and uniform.
  2. Add the crumbled blue cheese to the bowl. Use a silicone spatula to gently fold the crumbles into the creamy base, distributing them evenly while keeping them as intact as possible.
  3. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  4. Transfer the dressing to a serving bowl. Just before serving, sprinkle the top with the finely chopped fresh chives and the remaining coarse black pepper.

Notes

Buy the Block: Always buy a wedge or block of blue cheese and crumble it yourself for the best flavor and texture.
Don't Skip the Chill: The chilling step is crucial for the flavors to meld properly.
Adjust to Your Liking: If you prefer a thinner dressing, add more buttermilk, one teaspoon at a time.
Taste Before You Salt: Blue cheese is salty, so taste the dressing before making final salt adjustments.
