White Cheddar and Spinach Chicken Burgers with a Golden Sear

  • 1.5 lbs Ground Chicken 93/7 lean-to-fat ratio recommended
  • 2 cups Fresh Baby Spinach Finely chopped
  • 6 oz Sharp White Cheddar Cheese Half cubed, half sliced
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 2 tbsp Olive Oil For searing
  • 4 Brioche Buns Toasted
  • 4 leaves Green Leaf Lettuce
  • 1 small Red Onion Thinly sliced

Equipment

  • 1 Cast Iron Skillet Ensures a perfect golden-brown sear.
  • 1 Chef's knife For finely chopping spinach and onions.

Instructions
 

Prepare the Mixture
  1. Finely chop the spinach and cube half of the white cheddar. In a bowl, gently combine the ground chicken, chopped spinach, cheese cubes, garlic powder, and onion powder.
  2. Divide into 4 patties, about 1 inch (2.5cm) thick. Press a thumbprint into the center of each to ensure even cooking.
Cook and Assemble
  1. Heat oil in a cast iron skillet over medium-high heat. Season patties with salt and pepper. Sear for 5-6 minutes per side until golden-brown with charred edges.
  2. Place remaining white cheddar slices on patties during the last 2 minutes. Cover with a lid to melt into molten pockets.
  3. Toast buns in the pan. Layer lettuce, the chicken patty, and red onion on the bun and serve immediately.

Notes

Don't overwork the meat or the burgers will become tough.
Using a cast iron skillet is essential for the charred edges shown in the photos.
